It was first developed as a quick lunch alternative for workers in textile mills, but it has since spread throughout India and even abroad as a popular comfort dish. Bhaji, a spicy, buttery vegetable mash made by simmering and mashing boiled vegetables like potatoes, peas, carrots, and cauliflower with onions, tomatoes, and a special spice blend called pav bhaji masala, and Pav, which are soft Indian bread rolls, are the dish's two main ingredients.

For the Bhaji (Spiced Vegetable Mash):-

Ingredients:

  • · 3 medium potatoes (boiled and mashed)

    · 1 cup cauliflower florets (boiled)

    · ½ cup green peas (fresh or frozen)

    · 1 medium carrot (chopped)

    · 1 medium green capsicum (finely chopped)

    · 2 medium onions (finely chopped)

    · 3 large tomatoes (pureed )

    · 1 tbsp ginger-garlic paste

    · 1 green chili optional

    · 2 to 3 tsp pav bhaji masala (adjust to taste)

    · 1 tsp red chili powder

    · ¼ tsp turmeric powder

    · Salt to taste

    · 3 tbsp butter (extra for serving)

    · 1 tbsp cooking oil

    · Fresh coriander leaves (for garnish)

    · Lemon wedges (for serving)

    · Chopped onions (for garnish)

For the Pav (Bread Buns):-

  • 8 pav buns (Indian bread rolls)

  • Butter as needed

  • Pav bhaji masala (optional, for toasting buns)

How to Prepare Pav Bhaji at Home
First Step: Assemble and bring the vegetables to a boil.
Bring the carrots, cauliflower, potatoes, and green peas to a boil until tender.
You can use a potato masher to mash all the vegetables. Put aside.
Second Step:- Cook the Bhaji (Masala Base)

1. Now we have to make Bhaji. In a large pan or tawa, heat 1 tbsp oil and 1 tbsp butter.

2. In this step, add finely chopped onions and sauté until golden brown.

3. Stir in the ginger-garlic paste and keep in mind to cook until the raw smell disappears.

4. Add capsicum and cook for 2–3 minutes.

5. Add chopped or pureed tomatoes, and cook until they break down and release oil.

6. Add turmeric, red chili powder, and pav bhaji masala. Mix well.

7. Add the mashed vegetables, and combine everything thoroughly.

8. Add 1 cup of water according to the consistency, let the mixture simmer. Mash further for a smooth texture.

9. Finally, in this you have to mix 2 tbsp butter, stir well, and cook for another 6–12 minutes.

Third Step: Toast the Pav Buns.
1. Horizontally slice the pav buns.
2. Preheat a tawa, add butter, and then, if desired, scatter some pav bhaji masala on top.

While homemade masala is an option, store-bought brands like MDH, Everest, or Catch pav bhaji masala work wonders and save time. Always check the freshness and expiration date for the best results.

2. Mash the Vegetables Well

The key to a smooth and creamy pav bhaji lies in properly mashing the vegetables. After boiling your vegetables (potatoes, carrots, peas, cauliflower), use a potato masher to mash them thoroughly. For a smoother texture, you can even use an immersion blender. The smoother the bhaji, the better it pairs with the pav.

3. Use Butter Generously

Pav Bhaji is all about indulgence, and butter plays a central role. To achieve the signature creamy texture and rich flavour, add 3-4 tbsp of butter to the bhaji while it cooks. For an extra street-style touch, add a dollop of butter just before serving. Don’t forget to generously toast the pav buns in butter to give them that crispiness and flavour.

4. Cook the Bhaji on a Tawa

If you want to recreate the street food experience, cook your bhaji on a tawa (flat griddle), just like they do at Mumbai’s famous pav bhaji stalls. The high heat helps the flavors blend quickly, giving the bhaji a distinct smoky taste. Plus, you can mash and mix the bhaji right on the tawa, which is crucial for that authentic texture.

5. Add Fresh Lemon & Onions for a Zesty Kick

To balance the richness of the bhaji, always serve it with freshly chopped onions and a squeeze of lemon juice. This will cut through the heaviness and add a fresh, tangy flavor that complements the spiciness of the dish.

6. Spice it Up or Tone it Down

Adjust the spiciness of your pav bhaji based on personal preference. If you like it spicier, add more green chilies or red chili powder while cooking. For a milder version, reduce the amount of chili powder and add more tomato or capsicum to balance the heat. Customize your pav bhaji for different tastes.

10. Simmer the Bhaji for a Richer Flavour

While you may be eager to serve your pav bhaji quickly, giving the bhaji an extra simmer for 10-15 minutes over low heat can enhance its flavour. This allows the spices to fully meld with the vegetables, making the dish richer and more aromatic.
